Edam (Dutch Edammer), a Dutch cheese, is traditionally sold as spheres. It has a pale yellow interior with a red paraffin wax coat. Its name is Edam, a town in North Holland. The cheese spheres are coated with black wax after aging for at most 17 weeks. This is in addition to the red or orange. Edam is durable and can travel well. It does not spoil and only hardens.
