To make the omelette: Heat some coconut oil in a pan and sauté thinly sliced onion on medium heat. Take care to ensure that onion are not too softened. Next add diced green peppers. Sauté some more. Add a little freshly ground black pepper and sprinkle some sea salt to taste.
Next break couple of eggs on a hot skillet. Top up with the above onion-green pepper mix and let the eggs firm. Since it is an open faced omelette, we will not be turning it. Depending on how you like your eggs, you can cook it well (underside will be golden brown) or let the eggs be a bit runny.
To make fried cheese: Slice up Haloumi (Turkish cooking cheese) or Paneer (Indian cooking cheese). Dip it in egg white, coat with bread crumbs and then pan fry in coconut oil.
